  • 1-1/2 cups olive oil
  • 25 pounds Norbest ground turkey
  • 1 lb garlic cloves, minced
  • 7 lbs onions, diced
  • 6-1/4 cups hoisin sauce
  • 3 cups soy sauce
  • 1-1/2 cups rice wine vinegar
  • 1-1/2 cups freshly grated ginger
  • 1/2 cup Sriracha
  • 2, 10# cans whole water chestnuts, drained and diced
  • 50 green onions, thinly sliced
  • 25 heads butter lettuce


Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks. Drain excess fat.

Stir in garlic and onion; cook until onions have become translucent, about 3 minutes. Stir in hoisin sauce, soy sauce, rice wine vinegar, ginger, and Sriracha and cook 1-2 minutes more. Mix in water chestnuts and green onions.

To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style.
